I was housebound for a few days and perfected this recipe. This concoction requires careful measurement. I rarely use my microwave and I am not into shortcuts. For example, I bake
all of my bread (there isn't a decent loaf to be found in Miami). Nevertheless, this tastes like five-star stuff at 1:00 AM when you are desperate for a sugar and chocolate fix.
Ingredients:
- 1/4 cup all-purpose flour
- 1/4 cup 100% cacao cocoa powder
- 1/4 cup granulated sugar
- 1 egg white (preferably without any shell)
- 3 tbs. milk (regular or soy)
- 3 tbs. melted butter or oil
- 1/4 cup semi-sweet chocolate morsels (optional)
Stir the whole mess together in a coffee mug. Microwave for three minutes. Microwaves vary even with the same wattage so this may require some experimentation. Undercooked is better than overcooked. During the last minute of cooking, the whole thing rises from the mug like a piston. It will not spill over
usually.
The chocolate morsels make a big difference. They are overkill if you are using the cake as a base for something else like ice-cream. Try adding a bit of vanilla or some cinnamon.
